Beefsteaks are the biggest of the many tomato varieties. A wonderful slicing tomato, the beefsteak has an unusual ribbed shape, relatively few seeds, and a plump, meaty texture (hence its name). Because most “steak” varieties need hot sun to ripen to full flavor, they’re at their peak during late summer. Their size and shape make them excellent for stuffing and baking whole.
