A member of the cabbage family, cavolo nero is a type of kale traditionally used in Italian cuisine. It is one of the staple ingredients of minestrone. With dark blue-green leaves, the taste is described as slightly sweeter and more delicate than curly kale, with bitter and earthy notes.
